Cheesecake Rules I

I went to a master course of cheesecakes with a great chef, so I want to share simple rules to make great cheesecakes

INGREDIENTS
cream cheese has to be of good quality
cream cheese has to be at room temperature
When adding eggs do not over mix, because air will get into the mix and the cheese cake will go up and break

BAKING
Oven temperature is medium, if it´s too hot it will make cheesecake dry, and change texture.
Cheesecake finishes baking outside, you should take it out when it finishes the time stablished in the recipe, if you believe it´s underdone, leave it in the oven after turning it off.
Cheesecake molds are high, apply pam so you can release it from it easier.
If you are baking many cakes at the same time, put a mold in the oven with some water, so that cheesecakes bake with humidity

I hope that this simple rules that I learned  will help you

MOM´s B-Day Cake

When I was a little girl, my Mom used to bake this cake on our B-day, its a really simple and easy cake she just decorated it with sifted powder sugar, so every time I bake this cake it brings to me all those memories,
Thanks MOM

1 1/2 teaspoons baking powder
1 can condensed milk

1 teaspoon vanilla

4 large eggs

Decoration:
Betty Crocker chocolate Frosting
Color Sprinkles variation: just sift powder sugar
How to make it
1Preheat oven to 350º.,butter a 9 by 5 inch loaf pan.
2.Mix flour, baking powder and salt and set aside.
3.Cream butter, add condensed milk and vanilla and beat for 4 minutes, then add the eggs one at the time, and continue beating.
4. Add the flour mixture until well combined.
5.Spoon batter into prepared pan and bake for 30 min aprox.

6.Let cool on a wire rack, 10 to 15 min.
7.Let cool completely before you start decoration with chocolate frosting, just try to give an even finish, then add color sprinkles, I used a butterfly cookie mold, just put it on top of the cake and carefully add the color sprinkles.
