Gingerbread Cookies

 
 
I love Christmas and all the baking you can do during this season, this is my sencond attempt for Gingerbread cookies, I have this delicious recipe which I developed and I was lucky, as they got plenty of good comments, so I will share the recipe with  you my friends.
 
Ingredients:
1/2 cup butter
1/2 cup packed brown sugar
1/3 cup water
1/3 cup molasses
1 egg
4 cups all-purpose flour
1 tsp. baking soda
1 tsp. ground ginger
1 tsp. ground cinnamon
1 tsp. vanilla
1/2 tsp. ground nutmeg
pinch of ground cloves
Frosting:
400 grs. powder sugar
2 Tbsp. meringe powder
water as needed to give consistency
 
How To:
Beat butter and sugar in large bowl with electric mixer until creamy, ad water, molasses and egg, beat until well blended. Add flour, baking soda, ginger, cinnamon, vanilla, nutmeg, cloves, beat until perfectly blended.
Wrap doug tightly with plastic wrap, refrigerate at least 3 hours.
Preheat oven to 350°F.
Line baking paper.
Cut cookies and place them 2 to 3 inches apart.
Bake 12 to 15 minutes and let cool.
Prepare the frosting by just mixing the ingredients and decorate cookies.

Pumpkin Cookies with cinnamon/vanilla Icing

 
 
As you all know I love this time of the year, fall..... mmmm, the colors, everywhere, the spices, the flavors, everything.
I decided to try a new recipe for cookies, adding of course my personal touch, they turned out delicious, perfect texture and cakey sensation, hope you like them as much as I do, this recipe sure is a keeper.
 
INGREDIENTS
2 1/2 cups all purpose flour
1tsp. baking powder
1tsp.baking soda
2 tsp. ground cinnamon
1/2 tsp. ground nutmeg
 1 tsp. vanilla
1/2 tsp. salt
1/2 cup butter softened
1 1/2 cups white sugar
1 cup canned pumpkin puree
1 egg
 
FROSTING
2 cups confectioner´s sugar
3 Tbsp. evaporated milk
1 Tbsp. melted butter
1 tsp. vanilla
1/2 tsp. cinnamon
 
HOW-TO
Preheat oven to 350F.
Combine flour, baking powder,baking soda, cinnamon, nutmeg, vanilla, and salt
In a medium bowl, cream together the butter and white sugar.
Add pumpkin, egg and vanilla to buteer mixture, and beat until creamy.
Mix in dry ingredients.
Make little balls with dough and drop on lined cookie sheet
 
 
GLAZE
Combine confectioners sugar, evaporated milk, 1Tbsp. melted butter, and 1 tsp. vanilla and 1/2 tsp. cinnamon.
Add milk as needed for desired consistency
Cool cookies and drizzle glaze
You can play with cookie shapes, I did also triangles which turned out great too, I also added sugar sprinkles on top

My New Pumpkin Pie

Fall is here :) and I really love Pumpkin in all kinds of breads, pies and treats.
So this time I looked for a really easy pie, the one you can just do without having to buy special ingredients.

 
Crust
1 1/4 cups all purpose flour
1/2 cup powder sugar
1/2 cup chilled butter cut into cubes
3 Tbsp. whipping cream

Pie
1 can of pumpkin puree (2 cups)
1 Tbsp. cornstarch
1 can condensed milk
2 eggs
1/2 tsp. ground ginger
2 tsp. ground cinnamon
1/2 cup sugar
1/4 tsp. salt
1 cup sour cream
1/4 tsp. ground nutmeg
 
Decoration
white chocolate matches perfectly with pumpkin pie
you can melt and pipe and add sugar crystals
 
For Crust
Preheat oven to 350°F blend first 3 ingredients in processor until mixture resembles coarse meal, add Cream and process until moist clumps form.
Wrap in plastic and chill for 1 hour.
 
Roll out the dough and transfer to buttered and lined pie dish.
 
For Filling
 Mix all ingredients and pour fillling over crust. Bake untill filling puffs and borders are set, about 40 min. cool on rack

Microwave Vanilla-Coffee Caramels

I just love caramels, since I was a little girl I remember liking them better than chocolates or other treat, this time I finnaly came to find the right recipe.
Luckily I found this recipe and made a few changes. I hope you like it as much as I do and do it often, as it is a very easy recipe.
 
INGREDIENTS:
1/4 cup of butter
1/2 cup white sugar
1/2 cup brown sugar
1/2 cup light corn syrup
1/2 cup sweetened condensed milk
1 teaspoon vanilla
1 teaspoon instant coffee powder
 
For the topping:
1 cup milk chocolate chips
3/4 halved walnuts
 
HOW TO:
in a microwave safe bowl (at least 2 quart) add butter, white and brown sugar, syrup, sweetened condensed milk, coffee powder and vanilla.
Stir together and place in microwave, uncovered for 7 minutes, stopping and strirring twice during the cooking time.
Remove from microwave and pour into prepared lined paper which I also sprayed some cooking spray
 
Cut in circles, squares or any shape you like
Press halved walnuts on top of the caramel
 
 
 
Melt chocolate in microwave, pour into a piping bag and
pour chocolate over walnuts and caramel
Ready!

My favorite Pound Cake




I love pound cakes, there´s something about simplicity that I treasure, this recipe is incredibly moist and delicious, so I would like to share it with you feel free to dust on top powder sugar, sugar crystals, or maybe a chocolate ganache if you´re in for some chocolate fun
Ingredients:
1 cup unsalted butter at room temperature (additional for buttering pan)
3 cups sifted flour (additional fur dusting)
1/2 tsp. salt
3 cups sugar
7 large eggs

2 tsp. vainilla extract
1 cup heavy cream

1 bundt pan


How to:
Grease and flour pan
Sift toghether flour, and salt
Beat toghether butter, and sugar with an electric mixer, until pale and fluffy
Add eggs one at the time, beating after each addition
Add vanilla
Slowly add half of flour
Add heavy cream
Add rest of the flour
beat perfectly well untill creamy
Spoon batter into pan
Cook  at 350°F
Bake until golden or tothpick comes out clean
cool for 30 minutes

Capuccino Chocolate Cake

Last  March I baked this cake for my mother in law,
she loves chocolate and coffee,
so I made this cake which made her very happy

Cake
200 grs. butter
200 grs. sugar
150 grs. flour
200 grs. milk chocolate
65 grs. milk
6 egg whites
6 egg yolks
1 1/2 Tbsp. powder coffee
(diluted in 1 tbsp. of water)
Frosting
250 grs. milk chocolate
1 can condensed milk
1 Tbsp. powder coffee (diluted in 3 Tbsp. evaporated milk)
CAKE
Preheat oven to 350 °F.
cream the butter untill it has a lighter color , then add ,beat for one minute,
then the chocolate, give this 2 minutes and add milk and coffee.
In another bowl whisk the egg whites untill stiff,
 then add it to the cake batter with soft revolving movements.
Grease a pan, this is a medium cake, so any medium to big cake pan will do.
 Put the cake batter in the oven and bake for 35 to 45 min. or untill it's done.

FROSTING
1.Heat the condensed milk, and add the melted chocolate and the diluted coffee beating till you can see the bottom of the pan, (about 15 to 20 min)
Cover the cake .


DECORATION
Cover the cake with half of the frosting, the rest pipe it to create lines like I did
and if you like you can add sugar crystals.

Apple Cobbler


Apple Cobbler always makes me think of home, almost
everyone love cobblers, at least I do :)
I hope you like this easy recipe

Ingredients:
1 cup butter at room t°
1 cup granulated sugar
1 Tbsp. vanilla extract
3 eggs
2 cups flour
1 tsp. baking powder
1 can apple pie filling
1/2 cup of milk
Crumble:
1/4 cup butter
1/4 cup flour
1/4 cup brown sugar
1 tsp.cinnamon

How to:
Preheat oven to 350°F
Grease a 9inch pan, and set aside

Combine butter and sugar untill well blended
add vanilla
Add baking powder and flour
mix well
Spread onto bottom of mold
Add apple pie filling
Spread all over the apple filling and batter
Mix crumble ingredients and spread all over
Bake for 50 min.
let it stand untill cooled
and dust with powder sugar if desired

Chocolate Chip Cookie Dough Pound Cake

 

 I created this cookie dough pound cake, as I was looking through my
recipes, I decided to do it the easy way, meaning I did from scratch
only the pound cake, the cookie dough I used a mix, and saved time.

INGREDIENTS:
Cookie Dough Base
1 bag of chocolate chip cookie mix
1 egg
90grs. butter

Pound Cake
45 grs. butter
1/2 cup sugar
1Tbsp. vanilla
1 tsp. baking powder
100 grs. whipping cream
1/2 cup milk
2 eggs
Decoration
1 Tbsp. cocoa

HOW TO:
Preheat the oven to 300°F

 For the cookie base
melt the butter and just mix all the ingredients together
press into the previously greased and floured mold


For the Pound Cake:
Melt the butter, add the sugar and with electric mixer
blend in eggs, vanilla, baking powder, whipping cream
milk, and flour.
Pour over the cookie dough base


Bake for 40 to 45 min.
Decorate with cocoa or powder sugar, you can use a pattern
if you like, I just placed some paper cut rectangles on top
of the cake and then sifted some cocoa

Cookie Cake

Cookie Cake
the name sounds good to me,
we had baked some sugar cookies
 which to be honest turned out a little brown,
 so I decided to do something with them,
a cake made out with cookies!!!

INGREDIENTS
CAKE
4 cups crushed sugar cookies
2 cups whole milk
3/4 cup sugar
1 cup flour
1 Tbsp. baking powder
1 Tbsp cornstarch
1 1/2 Tbsp. vanilla
3 eggs

FROSTING
1cup powder sugar
1 Tbsp. vanilla
1Tbsp. evaporated milk

HOW TO:
Preheat oven to 325°F
 break the cookies  if you want to use the food
processor its fine

Add the milk and vanilla

Add eggs, sugar, baking powder, cornstarch and
flour, beating well in between each addition


Bake for 30 min or until you insert a toothpick
and comes out clean

Ready!

FROSTING:
mix all the ingredients, you may add some more drops
of evaporated milk if necessary
cover the cake

Pumpkin Cupcakes

I have always had something special with pumpkin treats, its not that here in Mexico is that popular but I don´t know, I just love it.
I had a spare can of pumpkin puree and decided to do something with it
I hope you like this easy and delicious recipe
Preheat oven to 350°f
 place your paper cases

MUFFINS
2 cups white sugar
1 1/4 cups vegetable oil
1 tsp vanilla extract
2 cups canned pumpkin
2 tsp. baking soda
4 eggs
2 cups all-purpose flour
3 tsp. baking powder
2 tsp. ground cinnamon
1/4 tsp.salt

HOW TO
Sift together the flour, baking powder, baking soda, salt and cinnamon, set aside.
In a large bowl combine sugar and oil, blend in vanilla and pumpkin.
then beat in eggs one at a time.
Gradually beat in flour mixture,

Spread batter into prepared paper cases.


Bake for about 20 min or until a toothpick inserted into the
 center of the cake comes out clean, allow to


Decoration
sift some powder sugar if you like

My Favorite Flan


As a little girl I learned from my mother this delicious flan recipe, which I hope you like, you can add different flavours such as almond or rum, you only have to substitute it for vanilla

Ingredients
1 can condensed milk
1 can evaporated milk
1 cup of whole milk
1 Tbsp. vanilla
3 eggs

1 cup of sugar for the caramel

How to
Preheat oven to 325 degrees.
 You will need one medium size mold and one bigger to put it in for water bath.
Pour 1 cup sugar in warm pan over medium heat.
  Constantly stir sugar until is browns and becomes caramel. Quickly pour  caramel into the medium mold, tilting it to swirl the caramel around the sides as much as possible, reheat caramel if it starts to harden.
In a mixer or with a whisk, blend the eggs together. Mix in the milks , then the vanilla. Blend smooth after each ingredient is added.
Pour custard into mold. Place it in a large mold, it can be glass or ceramic baking dish and fill with about 1-2 inches of hot water. Bake for 45 minutes in the water bath and check with a knife just to the side of the center. If knife comes out clean, it's ready.
Wait 2 hours till its set, unmold and put it in the fridge for about 2 more hours.

Chocolate Strips (cake decorations)


One day I was thinking of how could I do a simple, fun and delicious decoration for a cake, so I came up with this one, Chocolate Strips covered with sugar crystals or sprinkles.


Ingredients
200 grs. semi-sweet chocolate
your favorite sugar sprinkles (as much as desired)

How to
Line a baking sheet with waxed paper
 melt the chocolate and with a little spatula try to apply a thin layer of chocolate
then sprinkle the sugar and take them to the fridge until set
carefully peel off the chocolate strips.
arrange strips all over the cake
ready!!

Crema Catalana Sticks


I found this delicious "Turrón de Crema Catalana" an Spanish Specialty which we love, I dicided to do something about the last two packages I had so here´s the recipe and how-to, I hope you like it, my family loved it, in fact they´re very nice and almost always like what I do ha ha ha, its a fun way to make something out of delicious treats and left overs we enjoy during Christmas Season
First you have to find this Turrón, there are other brands, you can always use "Turrón de yema" too
it looks like this when you open it
you cut it in sticks wide or narrow ,that depends on how you like them
Prepare a chocolate ganache, I did a small portion, 100grs of semi-sweet chocolate and 3 Tbsp of whole milk, you heat the milk and add the chocolate in pieces, you integrate both with a spoon and the ganache is ready! you can always add( butter, 1/2 a tsp. and rum 1Tbsp, instead of 2 Tbsp. of milk)
cover half the sticks with the chocolate ganache
I also had some leftover chocolates, so I cut them in small pieces, you can also use walnuts, almonds, pistachios or dried fruits
and you sprinkle some chocolate pieces over the chocolate ganache and arrange them over some lined paper so when the chocolate sets you can put them somewhere else
